Ingredients
- 4 6-oz salmon fillets, skin removed
- 2 lbs potatoes, peeled and cut into 1-inch wedges
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lemon, sliced into 4 wedges
Method
- 1Preheat the oven to 425°F (220°C).
- 2Line a large baking tray with parchment paper, leaving some overhang for easy removal.
- 3Toss the potato wedges with 1 tbsp of olive oil, thyme, garlic powder, salt, and pepper on the prepared tray, spreading them out in a single layer.
- 4Roast the potatoes in the preheated oven for 20-25 minutes, or until they start to brown.
- 5Place the salmon fillets on a separate baking tray lined with parchment paper, drizzling with the remaining 1 tbsp of olive oil.
- 6Bake the salmon in the oven for 12-15 minutes, or until it reaches an internal temperature of 145°F (63°C).
- 7Remove both the potatoes and salmon from the oven, serving the fish atop the roasted potatoes with a squeeze of lemon juice and a sprinkle of chopped fresh herbs, if desired.
- 8Let the salmon rest for 2-3 minutes before serving to allow the juices to redistribute.
- 9Serve the baked salmon and roasted potatoes hot, garnished with additional lemon wedges on the side.
