Ingredients

  • 4 large boneless, skinless chicken breasts, pat dry
  • 2 lemons, 1 zested and 1 cut into wedges for serving
  • 2 tbsp olive oil
  • 4 sprigs fresh rosemary, chopped
  • 2 tsp garlic powder
  • 1 tsp Dijon mustard
  • Salt and pepper, to taste
  • 1 cup breadcrumbs
  • 2 tbsp grated Parmesan

Method

  1. 1Preheat grill to medium-high heat, about 400°F.
  2. 2Season the chicken with salt and pepper on both sides.
  3. 3In a medium bowl, whisk together olive oil, lemon zest, rosemary, garlic powder, and Dijon mustard.
  4. 4Add breadcrumbs and Parmesan to the bowl and toss to combine.
  5. 5Place the chicken breasts in the bowl and coat evenly with the herb crust mixture.
  6. 6Grill the chicken for 5-7 minutes per side, or until it reaches an internal temperature of 165°F.
  7. 7Transfer the chicken to a wire rack to rest for a few minutes.
  8. 8Serve immediately, garnished with lemon wedges.
