Ingredients
- 3 lbs pork chops, 1½-3 inches thick, preferably rib or loin
- ⅓ cup fish sauce
- ⅓ cup lime juice
- 3 cloves garlic, minced
- 3 inches fresh ginger, peeled and grated
- 3 tbsp brown sugar
- 1½ tsp ground cumin
- 1½ tsp ground coriander
- ¾ tsp turmeric powder
- ⅓ tsp cayenne pepper
- 3 tbsp vegetable oil
- 3 cups uncooked long-grain white rice
- 1½ cup water
- 3 tbsp unsalted butter, melted
- 1½ tsp turmeric powder
- Salt and black pepper, to taste
Method
- 1Mix fish sauce, lime juice, garlic, ginger, brown sugar, cumin, coriander, turmeric powder, and cayenne pepper in a blender or food processor until smooth.
- 2Add the mixture to a medium bowl and whisk in oil until combined.
- 3Add the pork chops to the marinade, turning to coat evenly, and let sit at room temperature for 30 minutes.
- 4Preheat grill to medium-high heat.
- 5Grill the pork chops for 5-7 minutes per side, or until cooked to your desired level of doneness.
- 6Transfer the pork chops to a plate and let rest for 5 minutes before slicing.
