Ingredients
1 pound large shrimp, peeled and deveined
1/2 cup olive oil
2 medium zucchinis, spiralized into noodles
2 cloves garlic, minced
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed lemon juice
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
Method
1Preheat the grill to medium-high heat, about 400°F, and line a tray with foil for easy cleanup.
2Thread the shrimp onto skewers, leaving a small space between each shrimp to allow for even cooking.
3Brush the zucchini noodles with olive oil and season with salt, then set aside until ready to grill.
4Grill the shrimp for 2-3 minutes per side, or until they turn pink and are cooked through.
5Add the zucchini noodles to the grill and cook for 2-3 minutes, or until they are lightly charred and tender.
