I'm a rich and savory dish with tender beef, crunchy bamboo shoots, and a depth of flavor from the combination of soy sauce, ginger, and garlic, all slow-cooked to perfection in a mixture of Chinese cooking wine and beef broth. My bold flavors will leave you wanting more
Ingredients
- 2 pounds beef brisket or shank, cut into 2-inch pieces
- 2 tablespoons vegetable oil
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 cup Chinese cooking wine
- 1 cup beef broth
- 1 tablespoon soy sauce
- 1 teaspoon sugar
- 1 can bamboo shoots, drained and sliced
- 2 star anise pods
- 1 cinnamon stick
Method
- 1Heat the oil in a large Dutch oven over medium-high heat, then sear the beef until browned on all sides, about 5 minutes.
- 2Remove the browned beef from the pot, then add the sliced onion and cook, stirring occasionally, until it is softened and lightly caramelized, about 8 minutes.
- 3Add the minced garlic and grated ginger to the pot and cook, stirring constantly, for 1 minute.
- 4Add the Chinese cooking wine, beef broth, soy sauce, and sugar to the pot, stirring to combine, then bring the mixture to a boil.
- 5Return the browned beef to the pot, along with the sliced bamboo shoots, star anise pods, and cinnamon stick, then cover the pot and transfer it to the oven.
- 6Braise the beef and bamboo shoots, covered, at 300°F for 2 1/2 hours, or until the beef is tender and easily shredded with a fork.
- 7Remove the pot from the oven, then let it cool slightly before skimming any excess fat from the surface of the braising liquid.
- 8Serve the braised beef and bamboo shoots, garnished with thinly sliced scallions and steamed rice on the side.
