I'm a spicy and satisfying bowl of crispy rice, savory prawns, and a variety of colorful vegetables, all tied together with the bold and spicy flavors of gochujang and Gochugaru. My combination of crunchy and soft textures will keep you engaged
Ingredients
- 1 cup medium-grain white rice, rinsed and drained
- 2 cups water
- 1/4 cup gochujang
- 2 tablespoons soy sauce
- 1 tablespoon Gochugaru (Korean chili flakes)
- 1 tablespoon brown sugar
- 1/4 cup vegetable oil
- 1 small onion, thinly sliced
- 2 medium zucchinis, sliced into 1/4-inch thick rounds
- 1 large carrot, peeled and grated
- 1 pound large prawns, shelled and deveined
- 2 cloves garlic, minced
- 2 eggs
- 1/4 cup toasted sesame seeds
- Salt, to taste
Method
- 1In a medium saucepan, combine the rice and water, and bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed and the rice is tender.
- 2In a small bowl, whisk together the gochujang, soy sauce, Gochugaru, and brown sugar to make the bibimbap sauce.
- 3In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat, then add the sliced onion and cook, stirring occasionally, for 5-7 minutes, or until it is lightly browned and caramelized.
- 4Add the zucchinis and carrots to the skillet, and cook, stirring occasionally, for 4-5 minutes, or until they are tender and lightly browned.
- 5Add the prawns, garlic, and a pinch of salt to the skillet, and cook, stirring constantly, for 2-3 minutes, or until the prawns are pink and just cooked through.
- 6In a small non-stick skillet, heat the remaining 1 tablespoon of vegetable oil over medium heat, then crack in the eggs and fry until the whites are set and the yolks are cooked to desired doneness.
- 7To assemble the bibimbap, place a scoop of cooked rice in the bottom of a bowl, then add a spoonful of the vegetable and prawn mixture, a fried egg, and a sprinkle of toasted sesame seeds, and serve immediately with the bibimbap sauce on the side.
- 8Divide the bibimbap sauce among the bowls, spooning it over the top of each dish in a thin, even layer.
- 9Season with salt to taste, then serve the bibimbap immediately, garnished with additional toasted sesame seeds if desired.
