Cheesy Bell Pepper Quesadilla

Ingredients

  • 2 large bell peppers, any color, seeded and sliced
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups shredded cheese, Monterey Jack or Cheddar
  • 4 large tortillas
  • 1 teaspoon cumin
  • Salt and pepper, to taste

Method

  1. 1Preheat a large skillet over medium-high heat, then add the olive oil and cook the sliced bell peppers until they begin to soften, about 5 minutes.
  2. 2Add the diced onion to the skillet and continue cooking, stirring occasionally, until the onion is translucent and the peppers are tender, about 5 minutes more.
  3. 3Add the minced garlic to the skillet and cook, stirring constantly, for 1 minute, until fragrant.
  4. 4In a large bowl, combine the cooked pepper and onion mixture, shredded cheese, and cumin, stirring to combine.
  5. 5Place a large tortilla in the skillet and sprinkle a quarter of the cheese and pepper mixture onto half of the tortilla, then fold the tortilla in half to enclose the filling.
  6. 6Cook the quesadilla, turning occasionally, until the tortilla is crispy and the cheese is melted, about 2-3 minutes per side, until deeply golden and fragrant.
  7. 7Repeat with the remaining tortillas and filling, cooking the quesadillas one at a time, until all are cooked and the cheese is melted and the tortillas are crispy.
  8. 8Serve the quesadillas hot, garnished with chopped fresh cilantro or scallions if desired.
