Lentil and Sausage Stew

Savory sausage and tender lentils come together in a hearty stew, filled with the sweetness of carrots and the depth of garlic. The Italian sausage adds a meaty flavor that complements the earthy lentils perfectly


Ingredients

  • ¾ tablespoon olive oil
  • ¾ large onion, chopped
  • 2¼ cloves garlic, minced
  • ¾ pound sweet Italian sausage, casings removed
  • ¾ large carrot, peeled and chopped
  • ¾ large celery stalk, chopped
  • ¾ can diced tomatoes
  • ¾ cup brown or green lentils, rinsed and drained
  • 3 cups chicken broth
  • ¾ teaspoon dried thyme
  • Salt and pepper, to taste

Method

  1. 1Heat the olive oil in a large pot over medium heat, then add the chopped onion and cook, stirring occasionally, for 8-10 minutes or until softened and lightly browned.
  2. 2Add the minced garlic and cook for 1-2 minutes, stirring constantly, until fragrant.
  3. 3Add the Italian sausage, breaking it up with a spoon as it cooks, and cook for 5-7 minutes or until browned, stirring occasionally.
  4. 4Add the chopped carrot and celery and cook for 5 minutes, stirring occasionally, until they begin to soften.
  5. 5Add the diced tomatoes, lentils, chicken broth, and thyme, then season with salt and pepper to taste.
  6. 6Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 30-40 minutes or until the lentils are tender.
  7. 7Serve the stew hot, garnished with fresh herbs if desired.
