Pork Shoulder with Ginger and Chili

A slow-cooked pork shoulder, smothered in a sticky, aromatic sauce that's infused with the warmth of ginger and the gentle heat of chilies. The tender meat falls apart effortlessly, releasing a fragrant steam that fills the kitchen with the promise of a satisfying, comforting meal. Ingredients

  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp ground cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 large onion, sliced
  • 2 large chilies, sliced
  • 1 cup beef broth
  • 1 cup water
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 2 pork shoulders, 2-3 pounds each

Method

  1. 1Season the pork shoulders with salt, black pepper, and cayenne pepper, making sure to massage the seasonings into the meat.
  2. 2Heat the oil in a large Dutch oven over medium-high heat, then sear the pork shoulders until deeply browned on all sides, about 5 minutes per side.
  3. 3Remove the pork from the pot and set it aside to rest.
  4. 4Reduce the heat to medium and sauté the onion and chilies until they're softened and lightly caramelized, about 10 minutes.
  5. 5Add the garlic, ginger, cinnamon, and cumin to the pot and cook, stirring constantly, for 1 minute.
  6. 6Add the beef broth, water, soy sauce, brown sugar, and rice vinegar to the pot, stirring to combine.
  7. 7Return the pork shoulders to the pot and make sure they're covered with the sauce.
  8. 8Transfer the pot to the oven and braise the pork at 300°F (150°C) for 2 1/2 to 3 hours, or until the meat is tender and falls apart easily.
