Chicken Satay with Peanut Sauce

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breast or thighs, cut into 1-inch strips
  • 1/2 cup coconut milk
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 1/2 cup peanuts, toasted and chopped
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1/4 cup water

Method

  1. 1In a blender or food processor, combine coconut milk, garlic, ginger, coriander powder, turmeric powder, salt, and black pepper, and blend until smooth.
  2. 2Pour the marinade into a large bowl, add the chicken, and toss to coat, then cover and refrigerate for at least 2 hours or overnight.
  3. 3Preheat a grill or grill pan to medium-high heat, and thread the marinated chicken onto skewers, if using.
  4. 4Brush the grill or grill pan with vegetable oil to prevent sticking, then grill the chicken for 5-7 minutes per side, or until cooked through.
  5. 5Meanwhile, make the peanut sauce by blending the toasted peanuts, peanut butter, soy sauce, lime juice, and honey in a blender or food processor until smooth.
  6. 6With the blender or food processor running, slowly pour in the water, and continue blending until the sauce is creamy and emulsified.
  7. 7Transfer the peanut sauce to a serving bowl, and garnish with additional toasted peanuts and chopped cilantro, if desired.
  8. 8Serve the grilled chicken satay with the peanut sauce for dipping, garnished with lime wedges and additional cilantro, if desired.
