Chicken Quesadilla

Ingredients

  • ½ pound boneless, skinless chicken breast, cut into small pieces
  • ¼ medium onion, diced
  • 1 cloves garlic, minced
  • ½ tablespoon chili powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon paprika
  • ⅛ teaspoon cayenne pepper
  • 4 large tortillas
  • 1 cups shredded cheese, divided

Method

  1. 1Heat a large skillet over medium-high heat and cook the chicken, stirring occasionally, until browned and cooked through, about 5-7 minutes.
  2. 2Add the diced onion to the skillet and cook, stirring occasionally, until softened and translucent, about 3-4 minutes.
  3. 3Add the minced garlic, chili powder, cumin, paprika, and cayenne pepper to the skillet and cook, stirring constantly, for 1 minute.
  4. 4In a large bowl, combine the cooked chicken and onion mixture, and stir to combine.
  5. 5Place a large tortilla in the skillet and sprinkle a quarter cup of shredded cheese on half of the tortilla, followed by a quarter cup of the chicken mixture, and fold the tortilla in half to enclose.
  6. 6Cook the quesadilla, flipping occasionally, until the tortilla is crispy and the cheese is melted, about 2-3 minutes per side.
  7. 7Repeat with the remaining tortillas, cheese, and chicken mixture, and cut the cooked quesadillas into wedges to serve.
