Baked Salmon with Roasted Broccoli

Ingredients

  • 4 salmon fillets, 6 ounces each, skin removed
  • 2 tablespoons olive oil
  • 2 lemons, juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 broccoli crowns, cut into florets
  • 1/2 cup breadcrumbs, toasted

Method

  1. 1Preheat the oven to 400°F and line a baking tray with parchment paper.
  2. 2Place the salmon fillets on the prepared tray, leaving about 1 inch of space between each fillet.
  3. 3Drizzle the olive oil over the salmon, then sprinkle with garlic, thyme, salt, and pepper.
  4. 4Roast the broccoli florets in the oven for 15-20 minutes, or until they are tender and lightly browned.
  5. 5After the broccoli has roasted for 10 minutes, add the salmon to the oven and bake for 8-12 minutes, or until it is cooked through and flakes easily with a fork.
  6. 6Remove the salmon and broccoli from the oven and sprinkle the toasted breadcrumbs over the top of each salmon fillet.
  7. 7Squeeze a sliver of lemon juice over the salmon and broccoli, then serve hot.
  8. 8Let the salmon rest for a minute or two before serving to allow the juices to redistribute.
  9. 9Transfer the salmon and broccoli to a serving platter or individual plates and serve immediately.
