- 3 cloves garlic, minced
- 1 can black beans, drained and rinsed
- 2 cups fresh spinach, chopped
- 1 cup shredded Monterey Jack cheese
- 1/2 cup grated cheddar cheese
- 8-10 corn tortillas
- 1 can enchilada sauce
Method
- 1Sauté the diced onion and minced garlic in a large skillet over medium heat until translucent, about 5 minutes.
- 2Add the chopped spinach to the skillet and cook, stirring frequently, until wilted, about 2-3 minutes.
- 3In a large bowl, combine the cooked black beans, wilted spinach, and 1/2 cup of the shredded Monterey Jack cheese, stirring to combine.
