Grilled Halloumi Wrap

The creamy halloumi cheese pairs perfectly with the fresh mint and parsley, creating a refreshing and satisfying wrap. The lemon juice adds a burst of citrus flavor that complements the richness of the cheese.


Ingredients

  • 4 6-inch pita breads
  • 1 8-ounce block halloumi cheese, sliced into 1/2-inch thick pieces
  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1/4 cup freshly chopped mint
  • 1/4 cup freshly chopped parsley
  • 2 lemons, juiced
  • 1 teaspoon salt

Method

  1. 1Preheat a grill or grill pan to medium-high heat, around 400°F, and brush the grates with olive oil to prevent sticking.
  2. 2Grill the halloumi cheese slices for 2-3 minutes per side, until they develop a golden-brown crust and a slightly firm texture.
  3. 3Meanwhile, toast the pita breads by wrapping them in foil and heating them on the grill for 30 seconds to 1 minute, until warmed through.
  4. 4In a small bowl, mix together the minced garlic, chopped mint, and chopped parsley.
  5. 5Spread a tablespoon of the garlic-herb mixture onto each toasted pita bread, leaving a small border around the edges.
  6. 6Assemble the wraps by placing a few slices of the grilled halloumi cheese onto each pita bread, followed by a squeeze of lemon juice and a sprinkle of salt.
  7. 7Drizzle the remaining olive oil over the cheese and serve immediately, with additional lemon wedges on the side.
  8. 8Repeat with the remaining ingredients to make the rest of the wraps.
