Baked Salmon with Roasted Vegetables

The delicate crunch of toasted sesame seeds sets the stage for this moist, flaky salmon, its rich flavor enhanced by the earthy sweetness of a well-roasted bed of asparagus and Brussels sprouts, all set under a golden sheet of melted feta cheese. Pan-baking brings a succulent tenderness to the fish, balanced by the caramelized depth of the roasted vegetables.


Ingredients

  • 2 salmon fillets, 6 oz each
  • 4 cups mixed vegetables (asparagus, Brussels sprouts, red onion, bell pepper)
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1/4 cup crumbled feta cheese
  • 2 tbsp sesame seeds
  • 2 lemons, cut into wedges

Method

  1. 1Preheat oven to 425°F (220°C). Arrange the vegetables in a single layer on a large baking sheet lined with parchment paper.
  2. 2Drizzle the olive oil over the vegetables and sprinkle with minced garlic, salt, and pepper.
  3. 3Toss the vegetables to coat them evenly with the oil and garlic mixture.
  4. 4Place the salmon fillets on a separate baking sheet lined with parchment paper.
  5. 5Drizzle the lemon juice, mustard, and thyme over the salmon and sprinkle with salt and pepper.
  6. 6Top each salmon fillet with a portion of the roasted vegetables and a sprinkle of crumbled feta cheese.
  7. 7Place the baking sheet with the salmon in the oven and bake for 12-15 minutes or until the fish is cooked through.
  8. 8Sprinkle toasted sesame seeds over the top of each salmon fillet and return to the oven for an additional 2-3 minutes, or until the sesame seeds are golden brown.
