Grilled Steak with Roasted Onion

40 min

Ingredients

  • 1.5 pounds ribeye steak, trimmed of excess fat
  • 2 large onions, peeled and sliced into 1/2-inch thick rings
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 tablespoons chopped fresh parsley, for garnish

Method

  1. 1Preheat the grill to medium-high heat, around 400°F, and season the steak with salt, pepper, garlic powder, and paprika.
  2. 2Line a baking sheet with foil and toss the onion slices with olive oil, salt, and pepper, spreading them out in a single layer.
  3. 3Roast the onions in a preheated oven at 425°F for 20-25 minutes, or until they are deeply golden and fragrant.
  4. 4Meanwhile, grill the steak for 5-7 minutes per side, or until it reaches the desired level of doneness.
  5. 5Once the steak is cooked, let it rest for 5 minutes before slicing it thinly against the grain.
  6. 6To serve, place the sliced steak on a platter or individual plates, and top with the roasted onions and a sprinkle of chopped parsley.
  7. 7Let the steak rest for a few minutes before slicing to allow the juices to redistribute, making the steak more tender and flavorful.
  8. 8Serve the steak and onions hot, garnished with additional parsley if desired.
