French Toast with Ginger and Lemon

Ingredients

  • 4 large eggs
  • 1 1/2 cups whole milk
  • 1/4 cup granulated sugar
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 4 slices challah bread, cut into 1-inch thick slices
  • 2 tbsp crystallized ginger, finely chopped
  • 1 lemon, zested and juiced

Method

  1. 1In a large bowl, whisk together eggs, milk, sugar, melted butter, vanilla extract, cinnamon, and ground ginger until well combined and smooth.
  2. 2Add the chopped crystallized ginger to the egg mixture and stir to distribute evenly.
  3. 3Heat a non-stick skillet or griddle over medium heat, about 325°F, until it reaches a gentle sizzle when water is flicked onto its surface.
  4. 4Dip each slice of challah bread into the egg mixture, coating both sides evenly, then place on the skillet or griddle.
  5. 5Cook the French toast for about 3-4 minutes on the first side, until it is deeply golden and fragrant, then flip and cook for another 2-3 minutes, until the other side is equally golden.
  6. 6While the French toast is cooking, mix the lemon zest and juice in a small bowl.
  7. 7Serve the French toast warm, topped with a drizzle of the lemon zest mixture and any additional crystallized ginger desired.
