Grilled Souvlaki is a classic and flavorful dish that combines the smoky flavor of grilled pork with the brightness of lemon and the earthy taste of oregano. The garlic and spices add depth to each bite, while the lemon zest adds a burst of citrus.
Ingredients
½ ¼ pounds pork shoulder, sliced into ½ ¼-inch cubes
¼ cup extra-virgin olive oil
1 cloves garlic, minced
1 tablespoons fresh oregano, chopped
½ tablespoon lemon zest
1 tablespoons freshly squeezed lemon juice
1 teaspoons kosher salt
½ teaspoon black pepper
⅛ teaspoon cayenne pepper
2 cloves whole garlic
2 wood skewers, soaked in water for at least 15 minutes
2 pita breads
Tzatziki sauce, for serving
Greek salad, for serving
Method
1Thread two to three pieces of pork onto each skewer, leaving a small space between each piece.
2Preheat a charcoal or gas grill to medium-high heat.
3In a large bowl, whisk together olive oil, garlic, oregano, lemon zest, lemon juice, salt, black pepper, and cayenne pepper to make the marinade.
4Add the pork skewers to the marinade and coat evenly, then cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.
5Grill the skewers for 8-10 minutes per side, or until deeply golden and charred.
6Serve the souvlaki in heated pita breads with tzatziki sauce, Greek salad, and a squeeze of lemon juice.
7Optional: Grill the whole garlic cloves alongside the souvlaki and serve them alongside for added smokiness and crunch.
