Ingredients
8-12 pork chops 1-inch thick boneless and frenched
2 tbsp olive oil
2 tsp dried oregano
1 tsp lemon zest
1 tsp garlic powder
1 tsp paprika
salt and pepper to taste
8-10 sprigs fresh oregano for garnish
4-6 wedges lemon
8 oz feta crumbled
2 tbsp red wine vinegar
1 tsp Dijon mustard
2 tbsp Greek yogurt
1 tbsp honey
1 tsp dried thyme
Method
1Preheat grill to medium-high heat 5 minutes.
2In a small bowl whisk together oregano, lemon zest, garlic powder, paprika, salt, and pepper.
3Rub the spice mixture onto both sides of the pork chops, coating evenly.
4Grill pork chops for 5-6 minutes per side, or until slightly charred and reaching an internal temperature of 145°F.
5Transfer the grilled pork chops to a plate and let rest 3 minutes.
6Whisk together vinaigrette by mixing together red wine vinegar, Dijon mustard, Greek yogurt, honey, and thyme.
