Ingredients

  • 8-12 pork chops 1-inch thick boneless and frenched
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp lemon zest
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt and pepper to taste
  • 8-10 sprigs fresh oregano for garnish
  • 4-6 wedges lemon
  • 8 oz feta crumbled
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 2 tbsp Greek yogurt
  • 1 tbsp honey
  • 1 tsp dried thyme

Method

  1. 1Preheat grill to medium-high heat 5 minutes.
  2. 2In a small bowl whisk together oregano, lemon zest, garlic powder, paprika, salt, and pepper.
  3. 3Rub the spice mixture onto both sides of the pork chops, coating evenly.
  4. 4Grill pork chops for 5-6 minutes per side, or until slightly charred and reaching an internal temperature of 145°F.
  5. 5Transfer the grilled pork chops to a plate and let rest 3 minutes.
  6. 6Whisk together vinaigrette by mixing together red wine vinegar, Dijon mustard, Greek yogurt, honey, and thyme.
  7. 7Drizzle the finishing vinaigrette over the rested pork chops and top each chop with a crouton-style oregano sprig and a squeeze of lemon juice
