Citrus and Berry Oat Bowl

I'm a warm and comforting bowl filled with the sweetness of honey and coconut, the spice of cinnamon and cardamom, and the creaminess of coconut milk, all mixed with soft and chewy oats. My citrus and berry flavors will transport you to a sunny morning


Ingredients

  • 1 1/2 cups rolled oats
  • 2 cups water
  • 1/4 cup shredded coconut
  • 1/4 cup honey
  • 1/2 cup coconut milk
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 2 tbsp unsalted butter, melted
  • 1 cup mixed berries (fresh or frozen)
  • 2 oranges, peeled and segmented
  • 1 lemon, juiced and zested
  • 1/4 cup sliced almonds

Method

  1. 1Combine oats, water, and shredded coconut in a medium saucepan.
  2. 2Bring to a simmer over medium heat, stirring occasionally.
  3. 3Reduce heat to low and cook, covered, for 20 minutes.
  4. 4Stir in honey, cinnamon, cardamom, and salt.
  5. 5Add coconut milk and melted butter, stirring to combine.
  6. 6Cook for an additional 5 minutes, until the oats have absorbed most of the liquid.
  7. 7Transfer the oats to individual bowls.
  8. 8Top with mixed berries, orange segments, lemon zest, and a sprinkle of sliced almonds.
