Ingredients

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, seeded and chopped
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can 14 oz chickpeas, drained and rinsed
  • 1 can 14 oz coconut milk
  • 2 cups vegetable broth
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper, to taste

Method

  1. 1In a large pan, heat 2 tablespoons of oil over medium heat, then sauté the diced onion until translucent, about 5 minutes.
  2. 2Add the minced garlic, chopped scotch bonnet pepper, and grated ginger, cooking for 1 minute, stirring frequently.
  3. 3Stir in the ground cumin and coriander, cooking for an additional 30 seconds, until fragrant.
  4. 4Add the chickpeas, coconut milk, and vegetable broth to the pan, bringing the mixture to a gentle simmer.
  5. 5Reduce the heat to low and let the curry simmer, uncovered, for 20-25 minutes, or until the sauce has thickened slightly and the flavors have melded together.
  6. 6Season the curry with salt and pepper to taste, then stir in the chopped cilantro.
