Creamy Rice and Egg Bowl

The creamy texture of cooked rice, infused with the richness of eggs and a hint of sweetness, is the first thing that greets you in this comforting bowl. As the steaming hot rice and egg mixture hits the bowl, the aroma of toasted sesame oil and scallions rises, teasing the senses and drawing you in for a warm, comforting breakfast. With each spoonful, the silkiness of the egg and the tender bite of the rice meld together in a harmonious balance of textures and flavors.


Ingredients

  • 2 cups Japanese short-grain rice, rinsed and drained
  • 2 cups water
  • 1 tablespoon sesame oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 4 large eggs
  • Salt and pepper, to taste

Method

  1. 1In a medium saucepan, combine the rice and water, and bring to a boil over high heat, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  2. 2Heat the sesame oil in a large non-stick skillet over medium heat, and cook the chopped onion, stirring occasionally, until translucent and lightly browned, about 8 minutes.
  3. 3Add the minced garlic and grated ginger to the skillet, and cook for 1 minute, stirring constantly, until fragrant.
  4. 4Push the onion mixture to one side of the skillet, then crack in the eggs, and scramble them until they are just set, breaking them up into small curds as they cook.
  5. 5Mix the eggs into the onion mixture, and season with salt and pepper to taste.
  6. 6To assemble the bowls, divide the cooked rice between four bowls, then spoon the egg and onion mixture over the top of the rice, and serve immediately.
  7. 7Cover and refrigerate any leftovers for up to a day, and reheat gently in the microwave or on the stovetop, adding a little water if the mixture seems dry.
