Ingredients
- 8-10 large eggs
- 2 large garlic cloves, minced
- 1 small onion, finely chopped
- 2 large tomatoes, diced
- 50g feta cheese, crumbled
- 15g freshly chopped oregano
- 20ml olive oil
- Salt and freshly ground black pepper
- 4 tablespoons grated Parmesan cheese
Method
- 1Heat 15ml olive oil in a 25cm non-stick skillet over medium heat.
- 2Add the minced garlic and cook, stirring occasionally, until soft and lightly golden.
- 3Add the chopped onion and cook, stirring occasionally, until translucent and fragile.
- 4Add the diced tomatoes and cook, stirring occasionally, until they release their juices and start to caramelize.
- 5In a separate bowl, whisk together the eggs until they become frothy and almost doubled in volume.
- 6Pour the whisked eggs over the skillet's contents, tilting to coat the bottom evenly.
- 7Cook for 4-5 minutes, until the edges start to set and the surface is almost dry to the touch.
- 8Use your spatula to gently fold the Greek omelette in thirds, like a letter, then slide it onto a plate and sprinkle with crumbled feta, grated Parmesan and a sprinkle of oregano.
