Grilled Halibut Breakfast Tacos

Ingredients

  • 1 pound halibut fillets, cut into small pieces
  • 1/2 cup freshly squeezed lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 1 jalapeño pepper, seeded and finely chopped
  • 8-10 corn tortillas
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • Salt and pepper, to taste
  • 2 large eggs, beaten
  • 1 cup shredded queso fresco, crumbled

Method

  1. 1Preheat the grill to medium-high heat, about 400°F, and brush the grates with olive oil to prevent sticking.
  2. 2Season the halibut pieces with cumin, salt, and pepper, then grill for 3-4 minutes per side, until cooked through and flaky.
  3. 3Meanwhile, warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
