Ingredients

  • 8 bone-in center-cut pork chops, about 1 inch thick
  • 6 tablespoons white miso paste
  • 2 tablespoon soy sauce
  • 2 tablespoon mirin
  • 2 tablespoon brown sugar
  • 2 tablespoon rice vinegar
  • 4 cloves garlic, minced
  • 2 teaspoon fresh ginger, grated

Method

  1. 1Whisk the miso paste, soy sauce, mirin, brown sugar, rice vinegar, garlic, and ginger in a small bowl until the mixture is smooth and homogeneous.
  2. 2Pat the pork chops dry with paper towels, then brush the miso glaze generously over both sides of the meat.
  3. 3Refrigerate the glazed chops on a wire rack set over a baking sheet for at least 30 minutes to allow the flavors to penetrate and the surface to dry slightly.
  4. 4Preheat your gas or charcoal grill to medium-high heat, aiming for a surface temperature of about 400°F (200°C).
  5. 5Brush the grill grates with neutral oil to prevent sticking, then place the pork chops perpendicular to the bars.
  6. 6Grill the chops for 4 to 5 minutes per side without moving them, allowing a deep, sticky char to form while remaining vigilant against burning the sugar.
  7. 7Remove the chops when the internal temperature reaches 145°F (63°C), then let them rest on a warm plate for 5 minutes before serving to redistribute the juices.
  8. 8Garnish with thin slices of scallion and toasted sesame seeds for a final pop of color and nutty aroma.
