Ingredients
1 large onion, thinly sliced and separated into rings
2 cloves garlic, minced
1 pound merguez sausage, sliced
1 can 28-ounce crushed tomatoes
1 teaspoon smoked paprika
1/2 teaspoon ground cumin

2 tablespoons olive oil
2 large eggs
1/2 cup crumbled feta cheese, chopped fresh parsley or cilantro for garnish
Method
1Heat the olive oil in a large cast-iron skillet over medium heat, then add the sliced onion and cook, stirring occasionally, until it is softened and lightly browned, about 8 minutes.
