Spinach and Mushroom Frittata

I'm a savory and satisfying breakfast dish, packed with the earthy flavors of mushrooms and spinach, and the richness of eggs. The combination of sautéed onions and garlic adds a depth of flavor that makes me a great way to start the day


Ingredients

  • 2 tablespoons olive oil, divided
  • 1 small onion, finely chopped
  • 2 cups mixed mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, stems removed and chopped
  • 8 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated cheddar cheese, divided

Method

  1. 1Heat 1 tablespoon of olive oil in a 10-inch oven-safe skillet over medium heat, then add the chopped onion and cook, stirring occasionally, until translucent.
  2. 2Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and start to brown.
  3. 3Add the minced garlic and cook for 1 minute, stirring constantly to prevent burning.
  4. 4Add the chopped spinach and cook, stirring constantly, until wilted.
  5. 5In a large bowl, whisk together the eggs, salt, and pepper, then stir in half of the grated cheese.
  6. 6Pour the egg mixture over the mushroom and spinach mixture in the skillet, then sprinkle with the remaining cheese.
  7. 7Transfer the skillet to a preheated oven and bake at 375°F for 25-30 minutes, or until the eggs are set and the frittata is golden brown on top
