Ingredients
- 2 tablespoons olive oil, divided
- 1 small onion, finely chopped
- 2 cups mixed mushrooms, sliced
- 2 cloves garlic, minced
- 2 cups fresh spinach, stems removed and chopped
- 8 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated cheddar cheese, divided

- 1Heat 1 tablespoon of olive oil in a 10-inch oven-safe skillet over medium heat, then add the chopped onion and cook, stirring occasionally, until translucent.
- 2Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and start to brown.
- 3Add the minced garlic and cook for 1 minute, stirring constantly to prevent burning.
- 4Add the chopped spinach and cook, stirring constantly, until wilted.
- 5In a large bowl, whisk together the eggs, salt, and pepper, then stir in half of the grated cheese.
- 6Pour the egg mixture over the mushroom and spinach mixture in the skillet, then sprinkle with the remaining cheese.
- 7Transfer the skillet to a preheated oven and bake at 375°F for 25-30 minutes, or until the eggs are set and the frittata is golden brown on top
