Ingredients

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1 cup brown or green lentils, rinsed and drained
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Method

  1. 1Heat the olive oil in a large pot over medium heat
  2. 2Add the diced onion and cook, stirring occasionally, until it is translucent and starting to caramelize, about 8 minutes
  3. 3Add the minced garlic and cook for 1-2 minutes, until fragrant
  4. 4Add the chopped carrots and celery and cook, stirring occasionally, for 5 minutes
  5. 5Add the lentils, vegetable broth, diced tomatoes, cumin, and thyme, and bring the mixture to a boil
  6. 6Reduce the heat to low and simmer, covered, until the lentils are tender, about 30-40 minutes
  7. 7Season the soup with salt and pepper to taste, then serve hot
