Oregano and Garlic Frittata

I'm a savory and satisfying morning treat, filled with the deep flavors of garlic and oregano, and the richness of melted Parmesan cheese. My creamy eggs and caramelized onions will keep you coming back for more


Ingredients

  • 8 large eggs, cold
  • 12 cloves garlic, minced
  • 4 tablespoons chopped fresh oregano
  • 1 cup grated grated Parmesan
  • 1 cup diced onion
  • 4 tablespoons unsalted butter, melted
  • 2 teaspoon salt
  • ½ teaspoon black pepper
  • 4 tablespoons grated Romano cheese

Method

  1. 1Preheat the oven to 375°F (190°C).
  2. 2In a large bowl, whisk together eggs, garlic, oregano, Parmesan, salt, and pepper.
  3. 3In a 9-inch oven-safe skillet, heat 1 tablespoon of butter over medium heat. Add the onion and cook, stirring occasionally, until softened and lightly caramelized, about 5 minutes.
  4. 4Pour the egg mixture over the onion and cook, stirring occasionally, until the edges start to set, about 2-3 minutes.
  5. 5Transfer the skillet to the oven and bake for 12-15 minutes, or until the edges are golden brown and the centers are still slightly runny.
  6. 6Remove the skillet from the oven and sprinkle with Romano cheese. Let it rest for 2-3 minutes before slicing and serving.
