- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large yellow bell pepper, cut into 1-inch pieces
- 1 large zucchini, cut into 1-inch slices
- 1 large red onion, cut into 1-inch pieces
Method
- 1Thread the pork, bell peppers, zucchini, and red onion onto skewers, leaving a small space between each piece to allow for even cooking.
- 2In a small bowl, whisk together the olive oil, garlic, rosemary, salt, and pepper to make the marinade.
- 3Brush the marinade onto the pork and vegetables, making sure they are evenly coated.
- 4Preheat the grill to medium-high heat, around 400°F.
- 5Grill the skewers for 10-12 minutes, turning occasionally, until the pork is cooked through and the vegetables are tender.
- 6Check the skewers for doneness by cutting into one of the pork pieces; it should be white and firm to the touch.
- 7Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
