Grilled Fish Sinigang

The tangy tamarind paste and the sweetness of the mixed vegetables create a perfect balance of flavors in this Filipino dish. The grilled fish adds a nice smokiness that complements the other ingredients.


Ingredients

  • 1 pound milkfish or tilapia, cut into 2-inch pieces
  • 1/4 cup tamarind paste
  • 2 cups mixed vegetables, such as tomatoes, okra, and bok choy
  • 2 tablespoons fish sauce
  • 1 tablespoon patis (fish sauce)
  • 1/4 cup lemongrass, bruised
  • 2 kaffir lime leaves
  • 1 jalapeño pepper, sliced

Method

  1. 1Preheat the grill to medium-high heat, then season the fish with salt and grill for 4-5 minutes per side, until cooked through.
  2. 2In a large pot, combine the tamarind paste, fish sauce, and patis, and bring to a boil over high heat.
  3. 3Add the mixed vegetables, lemongrass, and kaffir lime leaves to the pot, then reduce the heat to medium-low and simmer for 10-12 minutes.
  4. 4Add the grilled fish to the pot, then continue to simmer for an additional 2-3 minutes.
  5. 5Stir in the sliced jalapeño pepper, then taste and adjust the seasoning as needed.
  6. 6Ladle the Grilled Fish Sinigang into bowls, garnished with additional lemongrass and kaffir lime leaves if desired.
  7. 7Serve the dish hot, with steamed rice on the side to soak up the flavorful broth.
