Warm Berry and Millet Cereal

25 min422 kcal

The aroma of toasted millet drifts from the pot, nutty and earthy, before it softens into a creamy, porridge-like base. Warm, jammy berries provide a tart contrast that cuts through the grain's natural richness, resulting in a substantial and nourishing midday meal.

Ingredients

  • 1 cup hulled millet
  • 2 cups unsweetened almond milk
  • 1 cup filtered water
  • 1/4 teaspoon kosher salt
  • 2 cups fresh blackberries
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon ground cardamom
  • 1/4 cup toasted sliced almonds
  • 1 tablespoon hemp seeds

Method

  1. 1Place the millet in a dry saucepan over medium heat for 4 minutes until the grains smell like toasted popcorn.
  2. 2Pour the almond milk, water, and salt into the saucepan with the toasted millet.
  3. 3Bring the liquid to a boil, then reduce the heat to low and cover the pot tightly.
  4. 4Simmer the mixture for 20 minutes until the millet is tender and has absorbed most of the liquid.
  5. 5Combine the blackberries, maple syrup, and cardamom in a separate small skillet over medium heat.
  6. 6Cook the berry mixture for 5 minutes, lightly crushing them with a spoon, until they form a thick, syrupy sauce.
  7. 7Spoon the warm millet into bowls and top with the prepared berry sauce.
  8. 8Garnish each serving with the sliced almonds and hemp seeds before serving.
