Ingredients
- 1 1/2 pounds boneless, skinless chicken breast or thighs, cut into 1-inch pieces
- 2 large zucchinis, sliced into 1/4-inch thick rounds
- 2 tablespoons smoked paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon freshly squeezed lemon juice
- 1/4 cup chopped fresh parsley
- 2 large eggs, beaten (for serving)
Method
- 1Preheat the grill to medium-high heat, about 400°F, and brush the grates with olive oil to prevent sticking.
