Grilled Chicken and Smoked Paprika Zucchini

Juicy chicken and smoky zucchini, grilled to perfection and seasoned with a blend of smoked paprika, garlic, and lemon juice. The smokiness of the paprika and the brightness of the lemon create a delicious, well-balanced flavor profile


Ingredients

  • 1 1/2 pounds boneless, skinless chicken breast or thighs, cut into 1-inch pieces
  • 2 large zucchinis, sliced into 1/4-inch thick rounds
  • 2 tablespoons smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup chopped fresh parsley
  • 2 large eggs, beaten (for serving)

Method

  1. 1Preheat the grill to medium-high heat, about 400°F, and brush the grates with olive oil to prevent sticking.
  2. 2In a large bowl, whisk together smoked paprika, salt, and pepper, then add the chicken and toss to coat evenly.
  3. 3Grill the chicken for 5-7 minutes per side, or until it reaches an internal temperature of 165°F.
  4. 4While the chicken is cooking, brush the zucchini slices with olive oil and season with salt and pepper.
  5. 5Grill the zucchini slices for 2-3 minutes per side, or until they are tender and lightly charred.
  6. 6In a small bowl, mix together garlic and lemon juice, then brush the mixture onto the grilled zucchini.
  7. 7To serve, slice the grilled chicken and serve with the smoked paprika zucchini, parsley, and a fried or poached egg on top.
  8. 8Garnish with additional parsley and smoked paprika, if desired.
