- 1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 medium onions, chopped
- 3 cloves garlic, minced
- 2 cups uncooked white rice
- 4 cups chicken broth, warmed
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 1Preheat the oven to 375°F, then grease a 9x13-inch baking dish with a small amount of olive oil.
