Eggs and Spinach Scramble

Ingredients

  • 2 tablespoons unsalted butter, softened
  • 2 cloves garlic, peeled and minced
  • 1 small onion, finely chopped
  • 2 cups fresh spinach leaves, stems removed and discarded, leaves coarsely chopped
  • 4 large eggs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated cheddar cheese, optional

Method

  1. 1Melt the butter in a large skillet over medium heat, until it foams and subsides.
  2. 2Add the garlic and onion to the skillet, cooking until they're translucent and fragrant, about 3-4 minutes.
  3. 3Add the chopped spinach to the skillet, cooking until it's wilted and tender, about 2 minutes.
  4. 4In a large bowl, whisk the eggs together with the salt and pepper, until they're well combined.
  5. 5Pour the eggs over the spinach mixture in the skillet, scrambling them gently with a heat-resistant spatula, until they're just set, about 3-4 minutes.
  6. 6Use the spatula to create shallow folds in the eggs, allowing uncooked egg to flow to the surface and cook, until the eggs are cooked through, about 2 minutes more.
  7. 7Serve the eggs hot, topped with grated cheddar cheese if desired, and enjoy immediately.
