1/2 cup mixed citrus juice (orange, lemon, grapefruit)
1 tablespoon grated orange zest
1 tablespoon grated lemon zest
1/4 cup chopped fresh chives, for garnish
1/4 cup shredded cheese (such as cheddar or parmesan), optional
Method
1In a small bowl, whisk together the eggs, salt, and pepper until well combined, about 30 seconds.
2Heat the butter in a medium non-stick skillet over medium heat until melted, then tilt the pan to ensure the butter covers the entire surface.
3Pour in the egg mixture and let it cook for about 2 minutes, until the edges start to set.
4Pour the mixed citrus juice over the eggs, then sprinkle the grated orange and lemon zest on top.
