Pork Chops

30 min

Pan-seared to perfection, these pork chops are a hearty, satisfying main course. The thyme and garlic powder add a savory depth to the dish, while the lemon wedges provide a bright, citrusy note.

Ingredients

  • 4 1 1/2-inch thick pork chops, trimmed of excess fat
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 lemon, cut into wedges

Method

  1. 1Season the pork chops with salt, pepper, thyme, garlic powder, and paprika, making sure to coat them evenly.
  2. 2Heat the olive oil in a large skillet over medium-high heat, until it starts to shimmer and slightly smoke.
  3. 3Sear the pork chops for 3-4 minutes on each side, or until they develop a deep brown crust, then reduce the heat to medium-low.
  4. 4Continue cooking the pork chops for an additional 5-7 minutes, or until they reach an internal temperature of 145°F.
  5. 5Remove the pork chops from the skillet and let them rest for 5 minutes, allowing the juices to redistribute and the meat to relax.
  6. 6Serve the pork chops hot, with a squeeze of fresh lemon juice and a side of your choice.
  7. 7Let the pork chops rest for a few minutes before slicing them, to prevent the juices from running out.
