2 large eggs, room temperature
1 tablespoon unsalted butter, softened
1/2 cup fresh spinach leaves, chopped
2 tablespoons crumbled feta cheese

1 clove garlic, minced (optional)
Fresh parsley, chopped (optional)
2 tablespoons chopped fresh dill (optional)
Method
1Crack the eggs into a bowl and whisk them together with a pinch of salt and pepper until the whites and yolks are fully incorporated.
2Melt the butter in a 6-inch non-stick skillet over medium heat until it's hot and foamy.
3Pour the eggs into the skillet and let them cook for about 30 seconds, until the edges start to set.
4Tilt the skillet to allow uncooked egg to flow to the edges and cook for an additional 30 seconds.
5Sprinkle the chopped spinach over the eggs and let it wilt for about 1 minute, until it's just tender.
6Sprinkle the crumbled feta cheese over the spinach and use a spatula to gently lift and fold the edges of the omelette towards the center.
7Use the spatula to carefully slide the omelette out of the skillet onto a plate, folding it in half to conceal any filling.
