Bacon and Spinach Frittata

This frittata is a savory delight, with the smoky flavor of bacon mingling with the earthy sweetness of spinach and the richness of cheddar cheese. The eggs bind everything together, creating a satisfying and filling meal.


Ingredients

  • 4½ slices bacon, diced
  • 1½ medium onions, thinly sliced
  • 2¼ cloves garlic, minced
  • 1½ cups fresh spinach leaves, chopped
  • 6 large eggs
  • ⅓ cup grated cheddar cheese, divided
  • ⅓ teaspoon salt
  • ⅛ teaspoon black pepper

Method

  1. 1Cook the diced bacon in a large oven-safe skillet over medium heat, stirring occasionally, until crispy and golden brown.
  2. 2Remove the cooked bacon from the skillet with a slotted spoon and set aside on a paper towel-lined plate.
  3. 3Add the sliced onions to the skillet and cook, stirring occasionally, until they're softened and translucent.
  4. 4Add the minced garlic to the skillet and cook for 1 minute, stirring constantly to prevent burning.
  5. 5Stir in the chopped spinach leaves and cook until wilted, then add the cooked bacon back into the skillet.
  6. 6Pour the whisked eggs over the filling mixture in the skillet and sprinkle with half of the grated cheddar cheese.
  7. 7Transfer the skillet to a preheated oven and bake at 375°F for 20-25 minutes, or until the eggs are set and the top is lightly golden brown.
  8. 8Remove the skillet from the oven and sprinkle the remaining cheddar cheese over the top of the frittata.
  9. 9Let the frittata cool in the skillet for a few minutes before slicing and serving.
  10. 10Slide the frittata onto a serving plate and garnish with chopped fresh herbs, if desired.
