Ingredients

  • 8 large eggs, beaten
  • 2 cloves garlic, minced
  • 2 cups fresh spinach leaves
  • 1/4 cup unsalted butter, diced
  • 1/2 cup grated Parmesan
  • Salt and pepper, to taste
  • Fresh parsley or chives, for garnish (optional)

Method

  1. 1 Heat the butter in a large, heavy skillet over medium-low heat
  2. 2 Add the garlic and cook, stirring occasionally, until fragrant, 2-3 minutes.
  3. 3 Pour in the beaten eggs and stir to distribute the eggs in a smooth layer.
  4. 4 Let the eggs cook, undisturbed, for 30 seconds to allow the bottom to set.
  5. 5 Stir the eggs gently to scrape the bottom of the pan, introducing the uncooked egg.
  6. 6 Add the fresh spinach leaves and stir until the leaves are wilted and the eggs are almost set.
