Ingredients
- 6 slices bacon, chopped into 1-inch pieces
- 2 cups fresh spinach leaves, stems removed and discarded, leaves coarsely chopped
- 2 large eggs
- 1/2 cup grated cheddar cheese

- 2 tablespoons butter, divided
- 1 tablespoon chopped fresh chives, optional
