Chinese-Style Pork and Vegetable Stir-Fry

This stir-fry is a vibrant celebration of colors and flavors, with the tender pork loin and crunchy vegetables working together in perfect harmony. The fresh ginger adds a zesty kick.


Ingredients

  • 1 pound pork loin, sliced into thin strips
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers
  • 1 cup sliced carrots
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste

Method

  1. 1Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat, until it shimmers and slightly smokes. Add the pork and cook, stirring occasionally, until browned, about 3-4 minutes.
  2. 2Add the remaining 1 tablespoon of vegetable oil, then add the minced garlic and grated ginger, stirring constantly for 30 seconds, until fragrant.
  3. 3Add the broccoli, bell peppers, and carrots, cooking, stirring constantly, for 4-5 minutes, or until the vegetables are crisp-tender.
  4. 4Add the cooked pork back into the wok, then stir in the chopped green onions, soy sauce, oyster sauce (if using), and sesame oil, cooking for an additional 1-2 minutes, until the sauce has thickened.
  5. 5Season the stir-fry with salt and pepper to taste, adjusting the seasoning as needed.
  6. 6Transfer the stir-fry to a serving platter, garnished with additional green onions if desired.
