Ingredients
- 8 oz firm tofu, drained and cut into 1-inch cubes
- 1/4 cup Peruvian ají amarillo pepper sauce, such as Escabeche
- 2 tbsp freshly squeezed lime juice
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/4 tsp ground cayenne pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 2 tbsp unsalted butter
- 2 tbsp olive oil
Method
- 1Heat the butter and olive oil in a large skillet over medium-high heat until the butter begins to foam
- 2Add the tofu and sear until deeply golden and fragrant on all sides, about 4-5 minutes total
- 3Remove the tofu from the skillet and set aside on a plate
- 4Add the garlic to the skillet and cook, stirring constantly, for 1 minute
- 5Pour in the ají amarillo pepper sauce and cook, scraping up any browned bits from the bottom of the skillet, until the sauce has slightly thickened, about 2 minutes
- 6Stir in the lime juice, cumin, smoked paprika, cayenne pepper, salt, and black pepper
- 7Return the tofu to the skillet and coat with the spicy Peruvian sauce, spooning it over the top to ensure the tofu is fully coated
- 8Serve the pan-seared tofu hot, garnished with chopped cilantro
