8 large eggs
4 cloves garlic, thinly sliced
1 teaspoon smoked paprika
½ teaspoon salt
4 tablespoons unsalted butter
4 tablespoons heavy cream
4 tablespoons chopped fresh chives, for garnish
Method
1Heat the butter in a medium non-stick skillet over medium heat, until fully melted and shimmering
2Add the thinly sliced garlic and cook, stirring occasionally, until softened and lightly golden, about 4 minutes
3Pour in the eggs and cook, stirring frequently, until the eggs start to set, about 2 minutes
4Sprinkle the smoked paprika, salt, and a pinch of black pepper over the eggs and stir to combine
5Continue cooking the eggs, stirring constantly, until they are cooked through and still moist, about 3-4 minutes
6Remove the skillet from the heat and stir in the heavy cream until well combined
