Cheese and Onion Omelette

20 min

As the butter melts in the skillet, it releases a rich, creamy aroma that teases the senses and sets the stage for a fluffy, savory cheese and onion omelette. With a delicate balance of melted cheese and caramelized onions, this classic breakfast dish is a masterclass in texture and flavor. The key to a great cheese and onion omelette is in the gentle folding of the eggs, which allows the creamy cheese and sweet onions to mingle and merge in perfect harmony.

Ingredients

  • 2 large eggs
  • 1 small onion, thinly sliced
  • 2 tablespoons butter
  • 1/2 cup grated cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon grated Parmesan cheese

Method

  1. 1Crack the eggs into a bowl and whisk them together with a pinch of salt and pepper until the whites and yolks are fully incorporated.
  2. 2Heat 1 tablespoon of butter in a small non-stick skillet over medium heat until it foams and subsides.
  3. 3Add the sliced onions to the skillet and cook, stirring occasionally, until they are deep golden brown and caramelized, about 8-10 minutes.
  4. 4In a separate bowl, mix together the grated cheddar and Parmesan cheese.
  5. 5Pour the whisked eggs over the cooked onions in the skillet and cook until the edges start to set, about 2-3 minutes.
  6. 6Sprinkle the cheese mixture over half of the omelette and use a spatula to gently fold the other half over the cheese.
  7. 7Cook for an additional 30 seconds to 1 minute, until the cheese is melted and the eggs are just set.
  8. 8Slide the omelette out of the skillet onto a plate and garnish with chopped parsley.
