Herbed Chicken Frittata

Ingredients

  • 6 large eggs
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter, softened
  • 1/2 cup diced cooked chicken
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh chives
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced red bell pepper
  • 2 cloves garlic, minced

Method

  1. 1Preheat the oven to 375°F (190°C).
  2. 2In a large bowl, whisk together eggs, salt, and pepper until well combined.
  3. 3In a large oven-safe skillet, melt butter over medium heat.
  4. 4Add diced chicken, parsley, chives, and garlic to the skillet and cook, stirring occasionally, for 2-3 minutes.
  5. 5Pour the whisked eggs over the chicken mixture in the skillet and cook until the edges start to set, about 2-3 minutes.
  6. 6Sprinkle shredded cheese and diced red bell pepper over the eggs, then transfer the skillet to the preheated oven and bake until the eggs are almost set, about 12-15 minutes.
  7. 7Remove the skillet from the oven and use a spatula to gently fold the edges of the frittata towards the center, allowing uncooked egg to flow to the edges.
