Ingredients

  • 1 lb center-cut beef sirloin or strip steak, cut into 1.5-inch cubes
  • 2 tsp neutral oil, such as avocado or grapeseed
  • 12 oz fresh green beans, trimmed and ends snapped
  • 1 lemon, halved
  • 1 tsp flaky sea salt
  • 1 tsp freshly cracked black pepper
  • 1 tbsp unsalted butter
  • 2 cloves garlic, crushed and smashed
  • 1 tbsp fresh thyme leaves
  • 1 cup beef broth or jus, deglazing liquid
  • 1 shallot, thinly sliced

Method

  1. 1Pat the beef cubes completely dry with paper towels and season generously with salt and pepper; this ensures a proper crust rather than steaming the meat.
  2. 2Heat the oil in a large cast-iron skillet over medium-high heat until shimmering and just starting to smoke.
  3. 3Add the beef in a single layer, working in batches if necessary, and sear without moving for 2 minutes until a deep brown crust forms.
  4. 4Flip the beef cubes and continue cooking for another 2 minutes before transferring them to a warm plate to rest.
  5. 5Reduce heat to medium, add the shallot and green beans to the same pan, and sauté for 3 minutes until tender-crisp and lightly charred.
  6. 6Add the garlic, thyme, and lemon juice, stirring constantly for 30 seconds until fragrant and releasing aromatic oils.
  7. 7Return the beef and any resting juices to the pan, dot with butter, and toss vigorously until the sauce coats everything and the beef is warmed through.
  8. 8Adjust seasoning with flaky sea salt if needed, then serve immediately while the crust remains crisp.
