Ingredients
- ¾ pound sweet turkey sausage, casings removed
- 3 large eggs
- ⅓ teaspoon salt
- ⅛ teaspoon black pepper
- 1½ tablespoons unsalted butter, softened
- ⅛ cup chopped fresh chives
- ⅛ cup grated cheddar cheese, optional
- ⅓ teaspoon dried sage
- ⅛ teaspoon cayenne pepper, optional
Method
- 1Cook the turkey sausage in a large skillet over medium-high heat, breaking it up with a spoon, until no longer pink, about 5-7 minutes.
- 2Remove the cooked sausage from the skillet with a slotted spoon and set aside on a plate.
- 3Reduce the heat to medium and add the softened butter to the same skillet, letting it melt and coat the bottom.
- 4Pour in the eggs and let them cook, stirring occasionally, until the edges start to set, about 2 minutes.
- 5Add the cooked sausage back into the skillet with the eggs and stir gently to combine, cooking until the eggs are almost set, about 2-3 minutes more.
- 6Use a spatula to gently scramble the eggs and sausage together, taking care not to overmix, until the eggs are cooked through and there's no more liquid egg visible.
- 7Season the scrambled eggs with salt, pepper, dried sage, and cayenne pepper, if using, and stir in the chopped chives and grated cheddar cheese, if desired.
- 8Serve the scrambled eggs and turkey sausage hot, straight from the skillet.
- 9Transfer the scrambled eggs to a warm plate and garnish with additional chives, if desired.
