Steamed Ginger-Lime Cod with Jasmine Rice

Ingredients

  • 1 cup jasmine rice
  • 1.5 cups water
  • 2 6-ounce cod fillets
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons fresh ginger, cut into matchsticks
  • 1 lime, thinly sliced into rounds
  • 2 scallions, thinly sliced on a bias
  • 1/2 teaspoon white pepper

Method

  1. 1Rinse the jasmine rice under cold water until it runs clear and place it in a medium saucepan.
  2. 2Bring the rice and water to a boil, then cover and reduce the heat to low for 15 minutes.
  3. 3Remove the rice from the heat and let it rest, covered, for 10 minutes before fluffing with a fork.
  4. 4Arrange the cod fillets in a single layer on a heatproof plate that fits inside your steamer basket.
  5. 5Whisk together the soy sauce, rice vinegar, sesame oil, and white pepper in a small bowl.
  6. 6Drizzle the liquid mixture over the fish, then top each fillet with ginger matchsticks and lime rounds.
  7. 7Place the plate into the steamer over boiling water and cover tightly.
  8. 8Steam the cod for 8 minutes until the flesh turns opaque and flakes easily, then garnish with scallions before serving over the rice.
