Ingredients
1 cup brown or green lentils, rinsed and drained
2 cups water
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
2 ripe avocados, sliced
4 whole-grain tortillas
Fresh cilantro leaves, for garnish
Method
1Bring the lentils and water to a boil in a medium saucepan, then reduce the heat to a simmer and cook until the lentils are tender, about 20-25 minutes.
2While the lentils cook, heat the olive oil in a small skillet over medium heat. Add the chopped onion and cook, stirring occasionally, until softened and lightly golden, about 8 minutes.
3Add the minced garlic to the skillet with the onion and cook, stirring constantly, for 1-2 minutes or until fragrant.
4Stir in the ground cumin, coriander, salt, and black pepper. Cook for 1 minute.
5Add the cooked lentils to the skillet with the spice mixture and stir to combine. Taste and adjust the seasoning as needed.
6Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
7Assemble the wraps by spooning the lentil mixture onto the center of each tortilla, topping with sliced avocado, and garnishing with fresh cilantro leaves.
